1 cup roasted almond butter, unsalted
1 teaspoon vanilla extract
4 ounces unsweetened applesauce
½ cup pure maple syrup
1 ½ cups Desert Oasis ivory teff flour
1/8 teaspoon salt
1 cup dark chocolate chips
Preheat oven to 350 degrees. In a mixing bowl, combine almond butter, vanilla, apple sauce and maple syrup. Cream the ingredients together. Add the teff flour and salt and mix until combined. Add chocolate chips. Scoop batter to make balls 1 ¼ inches in diameter, then arrange in rows on cookie sheet lined with parchment paper. Leave 1-inch space around each cookie.
Using the back of a fork, flatten each ball of batter. Bake for 13 minutes in the center of the oven. Let cool on a rack. Makes about 24 cookies.
