1 ½ cups Desert Oasis teff flour
½ teaspoon salt
½ cup maple syrup
½ cup light baking oil, your choice
1 cup peanut butter
1 teaspoon vanilla
Preheat oven to 350 degrees. In a large bowl, combine flour and salt. In a separate bowl, mix maple syrup, oil, peanut butter and vanilla. Add to flour and blend until smooth. You can use a mixer or food processor. Shape into walnut-sized balls, then flatten gently with a fork. Bake for 15 minutes on parchment-lined cookie sheet. Let cool a few minutes on the cookie sheet before using a spatula to move them to a wire rack to cool thoroughly. Makes 24 cookies
Note: Chocolate chips can also be added.
